For some years now the PAN Sweet Decoration Center company has been organising professional training sessions on modern decorating techniques for pastry cooks. Experts holding training sessions in our company belong to the group of leading specialists in professional caramel production and in English-style decorating (sugarcraft). In our professionally equipped and air-conditioned teaching room in Poznań, where a nice and friendly atmosphere prevails, during dedicated and individual training sessions you will be taught and shown the latest trends in confectionery decorating. Małgorzata Weber, Master of Artistic Caramel Production, specialising in English-style products, author of books “Ideas and tips for cake decoration” and “From an idea to its implementation”, laureate of a prestigious competition entitled “ The Confectionery Personality of 2013”, jury member at a number of European confectionery competitions, is delighted to invite you to this season’s training sessions.

Training sessions - general terms

1. Our training sessions are always individual. Each training session is organised for participants working for the same pastry shop or for the same company, which enables us to create a unique atmosphere at our sessions as well as ensure high effectiveness of teaching and acquiring knowledge and skills. At our training sessions we accept from one to six participants from one company.

2. Each training topic (each level of expertise) is done within a one-day session from 10.00AM to 4.00PM. As the amount of information to absorb at our training sessions is considerable, we strongly advise you against registering for several expertise levels day after day. We recommend that you have breaks between our sessions enabling you to try out and implement your freshly acquired knowledge in your workshops and to put the freshly acquired skills into practice, to practice them to a degree allowing your participation in the next stage of training.

3. Our sessions take place in the training room at the headquarters of the company PAN Centre for Sweet Decorations, Poznań, 57Kolejowa Street. For participants needing overnight accommodation we have guestrooms belonging to the company PAN Centre for Sweet Decorations.

4. Our training sessions are paid in accordance with the current pricelist. The price includes all necessary raw materials, colouring and equipment individually for our participants. All decorations and cake dummies produced at the session can be taken free of charge to our participants' companies.

5. Training participants get a discount from 5% to 10% for all items bought at our factory shop on the day of the session. The same discount applies to all orders placed that day, but with later delivery time.

6. Participants are given special certificates of specified field training completion by the company PAN Centre for Sweet Decorations.

Training topics

The Sugarcraft – beginner's level

Getting to know sugar paste for the purpose of working on English style products, its basic features and possible applications
Getting to know sugar paste colouring methods: colouring of whole paste, marble effect, surface colouring, airbrush application, iridescent shiny colouring
Presentation of Sugarcraft equipment available on the Polish market
Getting to know basic decoration techniques and sugar paste processing: making frills, lace, beads and ribbons, using pincers and stamps, techniques of imprinting and cutting out patchwork decorations and of impressing patterns on sugar paste, methods of imprinting sugar paste, using moulds and cutters to produce basic sugar flowers, application of silicone and plastic moulds.

intermediate level
The Sugarcraft in practice – cakes for children and occasional cakes

Covering cakes with sugar paste, methods of sugar paste preservation
Full decoration of a dummy of a cake for children with the use of a range of moulds and cutters, finishing, decoration and cake colouring
Full decoration of an occasional birthday or christening cake dummy with the use of a wide range of equipment for the English style, practical application of airbrush colouring
Introduction to sugar paste figure modelling.

intermediate level

- Depending on the period of year our training session focuses on decorations and seasonal cakes: autumn cakes (including Halloween cakes), Christmas, St. Valentine's Day, Easter or First Communion cakes
- Covering cakes with sugar paste, methods of sugar paste preservation
- Full decoration of a seasonal cake dummy with the use of a range of moulds and cutters, finishing, decoration and cake colouring
- Everyday style decorations of a seasonal English style cakes to make on the spot, quickest methods of using English style elements in everyday work, simple, quick and effective decoration techniques, using ready-made seasonal chocolate decorations
- “when we have enough time and the customer has enough money” – complete decorating of an elegant and prestigious seasonal cake dummy with more labour-consuming, yet spectacular decorating techniques.

advanced level
